Stuffed omelets with baked salmon

When some very unrelated ingredients are available in the refrigerator, and in the pantry, then what to do? What is the easiest to do? The answer will vary from person to person. Somebody will love to go to restaurant, or take a home delivery. Somebody will like order some missing ingredients online. Somebody will like to avail the newest options which are currently available in the market. However, like an old-fashioned person I always love to improvise with whatever are available at home. When the other option are readily available why should I scratch my head to find out something new. I'm the person, who always like to do that. By this way I can cook same thing in different way. I'm not a chef, but I like to make new recipes. Some times it turns out good, some times not so good. Whenever, something turns out good, I always love to share that with you. Here is something like that.

 


Few florets of broccoli

Few florets of cauliflower

one-two mushrooms

One small zucchini

One small onion

One tbsp. of tomato ketchup

Half tsp. soy sauce

One and half cup of egg white (You can use three eggs)

Salt to taste

Pinch freshly ground black pepper

Two tbsp. of oil

Oil spray

Cut zucchini, and tomato in to cubes. Thinly slice the mushrooms.In a frying pan, heat oil in medium. Fry onion for few mints, covering the pan, stirring occasionally. When the onion becomes little tender, add the cauliflower florets. Fry under low-medium heat, covering the pan stirring occasionally. Add salt at this stage, which will help the cauliflowers florets to get tender quickly. Then add the other vegetable. The juice from zucchini, and mushroom will help to get done the vegetable. Add tomato sauce, and soy sauce, give a good stir. Keep the vegetables under low flame. In a bowl take the egg white or egg, lightly beat with a little salt. Heat a shallow frying pan under medium. Spray oil in it. Pour half of the egg mixture, and make an omelet. Take an omelet in a serving plate , pour half of the vegetable on one side, and fold other side to cover.

Baked salmon. 
Take a piece of aluminum foil. Lay the salmon fillet. Spray oil on both side. Sprinkle garlic powder, dry basil, and oregano leaves. fold the foil from all sides and cover the pieces. Preheat the oven at 350 degree fahrenheit. Bake he fish for half an hour. 
Serve hot with omelet. 
It is better to put the fish first in  the oven, then make the omelet. By the time the omelet  cooking finishes, the fish will also be baked.

Wow! Very nice creation! There is a website where you can plug in the stuff you have in your fridge and/or pantry and they will assemble a recipe for you. I've never tried it.

Like you, I will just use whatever is available at hand and sometimes they turn out alright and sometimes not. I don't like to waste any of what is left. Your baked salmon looks great!

That certainly sounds good. We are eating out of the freezer and store cupboard at the moment so I have no doubt we will be eating a little differently.

That looks very good to me!!! I often do the same thing- use up odds and ends of things in omelets and I also do quiches that way as we usually have a bunch of cheese around here. Hope you have a great night- xo Diana

Omelets are one of my favorite meals . . . breakfast, lunch or dinner. There is so much that you can do with them. I have salmon in the freezer, I may plan tomorrows dinner around your post, thanks :)
