Carrot soup

Carrots are very good to health. So, I always buy carrots, when I do grocery. This time I was too busy to go to market.  I sent my hubby dear, and he bought a bagful of carrot. I really didn’t know what to do those carrots. Only thing I knew that I’d to finish them. I mainly use carrots in lentil or in chicken curry. I’d to find some new ways to consume all the carrot. One brilliant idea was cooking carrot soup. Long ago I cooked carrot soup. In fact at that time I found a good recipe in a cook book. This time though the cook book was in my reach, but I was too lazy to take out from the cubby and go through the recipe. So, I cooked something whatever came in my mind.





Carrot soup
Serving size: 2
Ingredients:
2 carrots
A handful of green beans
6-7 clove of garlic
1 medium sized tomato
¼ tsp dried oregano
1 tbsp sour crème
Salt to taste


Method:
Finely chop the beans and tomato, and keep aside. Cut the carrots into big pieces. Boil the carrots in pressure cooker. Let the cooker cool down. Make a fine paste of carrot and crème. Mince the garlic cloves. Heat oil in a wok, and add the oregano.  When fine aroma starts coming out add the garlic. Sauté for 1 minute, add the beans and tomato.  Cover the wok, and cook for 5-6 minutes in medium heat. Add the carrot paste along with one cup of water, and bring it to boil. Cook until the beans become tender. Serve hot with toasted bread.
