Papaya-carrot curry
Today morning when I opened the refrigerator I found one
papaya and few carrots. I didn’t want to cook the papaya curry which I usually
cook. Instead of that I wanted to cook papaya and carrot together. I have never
cooked the two vegetables together. I had no idea what could be the end result?
I could be a total disaster, and then I had to throw a total bowl of vegetable.
Still I wanted to give a try. Anyway the curry turned out good and tasty.
Ingredients:
Cubed papaya 2 cups
1 carrot
2 tbsp yellow lentil
½ cup snow peas
1 tsp ginger paste
1 tsp ghee (clarified butter)
Pinch of turmeric
Salt to taste
For tampering:
1 bay leaf
1 inch cinnamon stick
2 green cardamoms
2 cloves
Method:
Peel the papaya and
cut into cubes. Peel the carrot and cut into circle. Wash the lentils with
water. In a pressure cooker put papaya and carrot and lentils. Add turmeric and
salt in it. Pressure cook until all the ingredients become soft. I use to put
the pressure-cooker in medium heat until one whistle. That is the enough time
to me to pressure cook anything, but it varies with person to person and place
to place. let the pressure-cooker to cool down. Then heat one tsp. of ghee in a
wok and add all the whole spices. Fry until the fine aroma starts coming, then
add ginger paste. Sauté for few seconds and add the boiled vegetables into it.
If you need, add one cup of water. Cook for 10 minutes. Serve hot with rice or
roti.
