Chicken vegetable stir fry

Actually I cooked this very dish long back. Probably I cooked during the months of December. I wrote down the recipe also. But the funny thing was that, I couldn't find the picture. Today while I was just browsing the pictures in my laptop, I suddenly have found out the photo. I quickly upload the recipe here for you.

One lb. boneless chicken

One large Capsicum

One large onion

One large tomato

6-7 pieces of mushrooms

One zucchini

One tsp. soy sauce

One tsp. oyster sauce

One tsp. chili sauce

One tsp tomato sauce

One tsp. sugar

Two tbsp. of oil (I used olive oil)

Salt to taste

Cut all the vegetables into medium sized cubes. Cut the chicken into cubes. Marinate the chicken with salt for one hour. Heat oil in a heavy bottomed wok. Add the onion, and sauté for few minutes. Add tomato and sauté for few minutes. Then add the chicken pieces, add stir. Let it cook for some time, covering the wok. Then salt, and stir well. Continue cooking over medium heat covering the wok, stirring occasionally. When the chicken pieces become tender, add rest of the vegetables.  Mix all the sauce , and sugar in a small bowl. Stir, and continue cooking. When the vegetables become tender, add the sauce mixture. Pour half cup water in the sauce bowl, scrape down the sauce in the water, mix well, and add the water in the curry. Continue cooking until all the juice dries up. Serve with roti.
