Both of us love Pad Thai, but every time eating out just to get the taste of the very plate is not possible. So, I had decided to cook at home. A person with little patience could not cook any elaborate dish. So, I tried to find out some short-cut recipes on the internet. After much browsing I found out one recipe, though that was not a short cut method. But, I thought, when I had a Thai curry paste in my, why not use that. I was wrong!!! The noodles tasted awe full. I realized using short cut method, I wouldn’t get any good result. So, I went to grocery store and bought oyster sauce, fish sauce , and other ingredients. But while going to pay, suddenly I noticed one bottle of pad-thai sauce. I also bought that one also, just to give a try. I cooked pad-thai by using that sauce. I didn’t use oyster sauce or fish sauce. May be next time I’ll use them while cooking Pad Thai. Using that single sauce I able to get the taste of Pad Thai.Here is the recipe using pad-thai sauce
Ingredients: (The measurements are for 2 plates) Rice noodles 2 cups cubed boneless chicken 1tsp ginger paste 1 tsp garlic paste 1 cup small shrimps (shelled and deveined) 1/4 cup or more pad-thai sauce (according to your taste) 1 bunch of spring onion 1 cup bean sprouts 2 tbsp. of oil Method: Marinate the chicken cube with salt, ginger and garlic paste at least for one hour. Cook the rice noodles according to the instruction given on the packet of the noodles. Keep the noodles aside. Heat oil in a frying pan under medium heat. Cook the chicken cube until tender covering the pan. Add the shrimps and cook. Add salt according to your taste. Add the noodles and the pad thai. Give a good stir. Add the spring onion , and cook for few minutes. Serve hot with bean sprouts on the side of the plate.
One I was talking with one of friends. Just in the course of conversation we talked about tofu. I rarely cook tofu, because I know only one recipe of tofu, and that is very elaborate. Few days back I bought a packet of tofu, and I had been delaying to cook that. My good friend gave me very easy yet tasty recipe of tofu. She told that day, and next day I cooked the same. The curry was awesome with roti.Ingredients:1 cup chopped vegetable (I used store bought frozen vegetables)1 small onion, finely chopped1/2 of firm tofu chunk1/2 tsp cumin powder1/2 coriander powder1/2 tsp garam mashala powder (You can get at any Indian grocery store.)salt to taste1 tbsp oil
Method: Heat one tbsp. of oil in medium heat in a wok. Add the chopped onion. Fry the onion for few minutes covering the wok. After few minutes add the chopped vegetable, give a stir, and cover the wok. Let cook the curry for some times, until the vegetables are tender. Stir the curry occasionally. Chop the tofu into small cubes. Add salt, garam mashala powder, cumin powder , and coriander powder. Give a good stir, and let it cook. After sometime if the vegetables are not still tender, add one cup of water and bring it into boil, covering the work. Then add the tofu cube , and cook under medium heat until the curry becomes dry. Serve hot with roti.
Method: Thinly slice the chicken breast. Marinate the chicken slices with salt and ginger paste for 2 hours. (As long as you marinate, as little time it would take to be soft.) Add tomato sauce, cilantro, oregano in the marinated chicken well. Take bread crumb on flat bowl or on a dish, and coat each slice of chicken well. Keep them aside. Heat 2 tbsp. of oil in a frying pan, under medium heat. Fry the chicken slices cover the pan until both sides are brown. Serve hot with salad and tomato sauce.
It was early in the morning, I was just lying on my bed, and not feeling to get up. Some abrupt thought started pouring in my mind. First of all came in my mind that, how I would teach all the problems of probabilities , vectors, dynamics and many more during his high school days. Then I just smiled to myself, thinking that another 10 years are there to reach high school. However, time files by. Still I feel that,I came home from hospital taking him in my arm just yesterday. But he is almost six years old now. Six years is extremely short time, when I think about my own school days. It was just yesterday I was going to school with two braids tied with white ribbons. This “just yesterday” was actually finished, 20 long years ago. So, this 10 years are also going to be finished in a wink. Then I was thinking about his Kindergarten days. The Kindergarten year had been already completed. He is going to start his grade one year in the last week of August. One year just passed away. How it finished still I couldn’t figure out . Is one year too short to realize? 12 long months he was in kindergarten, but was it actually 12 months, or just 12 days or one day? Suddenly I felt very sad, when I should be happy. I should not be cynical. I should look forward, not backward. My baby is growing up day by day. He is going to learn more things, he is going to be more mature, more smart, not naive like a Kindergarten child, where the teacher takes a crying child on her lap to pacify him/her. But I’m sad. I’m going to miss many thing. I’m going to his baby face, his baby teeth, his silly questions, and many more. A sudden sadness loomed over me. I just couldn’t sleep. I woke up. I felt to wake him up and give him a tight hug. I wanted to tell him, please don’t grow up, just be a little boy to me. I love your baby days. I love you.
